Creamy Tomato Pasta
1 onion, finely chopped
2 cloves garlic, chopped
3 tbsp. olive oil
2 lg. cans Italian tomatoes
1 cup chicken broth
1 1/2 tsp. basil, chopped (fresh is best)
1/2 cup whipping cream
2 tbsp. Aha! Spicy Pepper Paste*
1 lb. of your favorite pasta, cooked
In a large frying pan, over medium
heat, fry onion and garlic in olive oil until
limp. Add tomatoes, broth, basil and Aha! Spicy Pepper Paste. Simmer
20 to 30 minutes, uncovered.
Stir in whipped cream and add salt and pepper to taste.
Rewarm and toss with your favorite pasta.
*I became familiar with these pepper
pastes, when I worked at a Costco road
show. They are so handy to add a little zip to any recipe. They are
all imported
from Peru, with new and different peppers, this one has the Panca pepper.
They are sometimes available in higher end grocery stores, you can use any
chili paste that you like.
