Creamy Grilled Tomatoes

12-15 plum tomatoes, halved
olive oil or olive oil-flavored cooking spray
2 cups purchased Alfredo Sauce
1/4 cup snipped sun-dried tomatoes
1/4 cup white wine
8 slices Italian bread, sliced 1/2" thick
garlic-flavored cooking spray

Freshly grated Parmesan
Fresh oregano sprigs

Brush tomatoes with olive oil (or spray lightly with cooking spray). Grill until cooked on an outdoor
grill--either gas or charcoal. While tomatoes cook, heat the Alfredo sauce, sun-dried tomatoes and wine
over low heat. Spray bread slices with garlic spray and toast on grill. To serve, place bread on plate, top
with tomatoes and pour the sauce over top. Sprinkle with freshly grated Parmesan and garnish sprigs of
fresh oregano. Serve as an appetizer or vegetable dish. serves 4-6

MOM!MOM! notes:  We all loved this recipe, so easy, unique and delicious, chicken or ham can
be added to the sauce to make it a little more substantial.  We also added scrambled eggs on
top of the tomatoes and then added the sauce and made a great breakfast.  The sauce alone is
also good on green vegetables and cauliflower.
