Actually Cranberry-Apple-Orange Relish and it comes from Jackie on our topica list.
Cranberry-Apple-Orange Relish
3 Naval Oranges
1 C Brown Sugar, firmly packed
1 Pound fresh or frozen cranberries (I have not found them
in 1 pound bags so I just use 2 bags and double this recipe)
1 Green Apple, peeled and chopped fine.
1/8th teaspoon Allspice
Grate enough rind from the oranges to make 1 teaspoon
1 C of orange juice squeezed from the oranges.
Grate the rind from your oranges and reserve. Squeeze
juice from oranges to make one cup juice. Put juice and
brown sugar into a pan
and bring to a boil, stirring.
Add cranberries (rinsed), and the Allspice. Lower heat
and simmer for 5 minutes or until the berries start to pop.
Remove from heat
and add the chopped apples and the grated orange rind.
While it is still hot, I
mash the berries with an old fashioned hand potato masher.
This year I used frozen berries, and I substituted OJ from
a carton and it came out
just fine. Now, you could leave the berries whole, or mash
them like I do, or, I
guess you could put them in a food processor. When you mash
them, they mix better
with the sugar mixture, and the relish is thicker and
sweeter.
This recipe doubles really well.
