Crab and Broccoli Bisque
¼ c. margarine
¼ c. flour
¼ c. minced onion
3 c. chicken broth
1 10 oz. package sliced mushrooms
1 c. chopped fresh broccoli
1 c. half and half cream
1 c. shredded Swiss cheese
1 6 ounce can crab meat drained and flaked remove cartilage if any.
1 bay leaf.
Dash of hot sauce if desired
Salt and pepper to taste
In large frying pan, sauté mushrooms, onion, and broccoli in butter until
tender. Add flour, bay leaf, and salt and pepper to taste. Stir in chicken broth
and half and half cream. Bring to boil. Continue to cook and stir about two
minutes until thickens. Add cheese and crab. Stir until cheese melts. Discard
bay leaf before serving. Top of each bowl with a dash of hot sauce if desired.
