Chocolate Fig Bon Bons
8 oz. dried figs, stems removed
2/3 cup toasted hazelnuts
8 crushed vanilla wafer cookies
1/3 cup powdered sugar
1/4 cup rum
3 oz. semi sweet chocolate
Vegetable Oil
Process figs, hazelnuts and vanilla wafers in a food processor until finely
ground.
Add powdered sugar, run and orange peel, process until well mixed. Dampen hands
and shape mixture into balls. Arrange close together on a baking sheet or
wire rack.
In a small, deep, microwaveable bowl, heat chocolate on high, one to two
minutes.
Stir once every minute. Add a few drops of vegetable oil if needed to thin
out chocolate
enough to drizzle. Dip the tips of a fork in the chocolate and quickly
drizzle over the fig
balls. Refrigerate until chocolate is set. Store in an airtight
container up to 1 week.
