This salad is great for a hot day. The
chicken can be grilled or broiled or
you can use leftovers.
Chicken Garbanzo Salad
For Dressing:
2 cups carrot juice
2 tbsp. lemon juice (fresh is better)
1 tbsp. olive
oil
1 tsp. ground cumin
1 pound mixed lettuce (use any kind you
like)
1 bunch spinach
1 pound carrots
4 tomatoes
1 19 oz can of garbanzo beans
2 skinless boneless chicken breasts
Make Dressing:
Boil carrot juice until reduced to 3/4 cup, cool. In a bowl, whisk together
carrot juice, lemon juice, oil and cumin and season with salt and pepper.
Cut up your lettuce and spinach into strips
and grate carrots. Dice up the
tomatoes. Rinse garbanzos.
Cook the chicken in whatever method you like
best.
Cool the chicken and slice it up. In a
large bowl toss chicken with the
vegetables. Toss with dressing. Serves about 4 as a main course.
