CHEESY CHICKEN CHOWDER
8 tablespoons butter
2 cups carrots, shredded
1/2 cup onion, chopped
1/2 cup flour
3 cups chicken broth
4 cups milk
2 cups diced cooked chicken
1 cup corn (fresh or frozen)
I teaspoon Worcestershire sauce
8 ounces cheddar cheese, shredded
2 tablespoons white wine
1 teaspoon powdered mustard
Pepper and salt to taste.
Melt butter in a skillet. Add carrots and onion then sauté until
tender. Blend in flour. Add broth and milk. Cook and stir until thick
and smooth. Add remaining ingredients and stir until cheese is melted.
Makes 8 servings.
