Buttermilk Scallion Biscuits
Vegetable Cooking Spray
1 1/4 cups flour
1/4 cup yellow cornmeal
2 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
1 1/2 tsp. butter
4 medium scallions, finely chopped
1 cup low fat buttermilk
Preheat oven to 375.  Lightly 
spray a large baking sheet with the cooking spray.
In a large bowl, toss the flour, cornmeal, baking powder, sugar and salt.
Using your fingers, work in the butter until blended.  Toss in the 
scallions, then stir in 
the buttermilk just until the mixture comes together.  
Spoon the dough onto the prepared 
baking sheet in 6 equal mounds, spacing them 
about 2 inches apart.  Bake for about 25 minutes, or until the biscuits are 
golden.
Transfer to a rack and let cool slightly.
