Broccoli Bolognese Bake
1 Tbsp olive oil
1 Tbsp butter
1 large clove garlic, minced
1 pound broccoli florets
1/2 cup diced red bell pepper
1 1/2 cups half and half
1 1/2 Tbsp polenta or yellow cornmeal
1/4 cup sliced black olives
1/2 tsp Italian seasoning herbs
1/2 tsp ground pepper
1/2 cup grated parmesan cheese
1 cup coarsely crushed croutons
2 Tbsp bacon bits
1 small green onion, minced
Heat the oil and butter in a 10 inch oven proof skillet. Add the
garlic, florets and bell pepper. Sauté over medium heat for 2 minutes.
Add the half and half. Bring to a boil. Gradually stir in the polenta,
olives, herbs and pepper. Reduce the heat and simmer 3 minutes or till
the mixture thickens slightly. Remove from the heat and stir in the
cheese. Bake at 350 degrees 15 minutes. Combine the croutons, bacon and
onion in a small bowl; sprinkle over the broccoli mixture and bake
10-15 minutes more or till heated through and well thickened. Serves 6.
