BROCCOLI ALFREDO SOUP
2 tablespoons margarine
1 cup onions, finely chopped
5 cups hot water
4 cups fresh broccoli, chopped
1 teaspoon salt
1 teaspoon garlic powder
1 package noodle Alfredo dinner (any brand)
1 cup milk
8 oz. Velveeta cheese, cut into cubes
In a large pan or soup pot, melt margarine over medium heat. Add
onions
and cook 3-5 minutes until onions are transparent. Add water,
broccoli and
salt. Cover and simmer 10-12 minutes until broccoli is tender. Add
pasta,
seasoning packet and milk. Cook uncovered 8-10 minutes over medium low
heat. Add cheese and cook and additional 2-4 minutes to melt cheese.
Makes
6 servings. (To save time I pick up my broccoli and onions already
chopped
from the salad bar at the store.)
