Baked Cinnamon-Chili Yams
1/2 cup butter (1 stick), room 
temperature
1 tbsp. plus 2 tsp. chili powder
1 tbsp. cinnamon
1/2 tsp. salt
1/8 tsp. cayenne pepper
6 yams
Using an electric mixer, beat the first 5 ingredients in a medium bowl until 
fluffy.  
Preheat oven to 400.  Line a large baking sheet with foil.  Place yams 
on the sheet and bake
until tender about one hour and 10 minutes.  Slit each yam lengthwise.  
Spoon 1 tbsp. chili butter into each yam half.  Serve passing the remaining 
butter separately.
