Baja Meatball Soup
Meatballs:
1/4 pound ground beef or turkey
1/4 tsp. cumin
1/4 tsp. oregano
1/4 tsp. onion powder
1/4 tsp. garlic powder
pinch of chili powder
Soup:
5 cups chicken broth
1/2 cup sliced green onions (even the green part)
1 mild green chili
1 cup chopped tomatoes fresh or canned
1/2 cup salsa
2 tbsp. fresh cilantro
2 zucchini, chopped
3/4 cup corn
Meatballs:
Preheat oven to 500. Line a shallow pan with aluminum foil. Mix
ground meat with the spices
and blend well. Shape into 12 meatballs. Bake in oven for 25
minutes. Cool.
Soup:
Bring broth to a boil in a large pot. Add green onions and simmer 10
minutes. Mince pepper
and add to soup with tomatoes, salsa and cilantro. Simmer for 15 minutes.
Add squash and corn
and simmer 10 more minutes. Add meatballs just before serving.
