AVOCADO SOUP

This is very rich so only small servings are suggested.  Great for a starter for a nice dinner.

2 large avocados
2 cups chicken broth
2 cups whipping cream
2 tbsp. cognac or brandy
2 tbsp. sherry
Optional garnishes:  Crabmeat, baby shrimp, diced tomatoes or chives

Peel avocados and dice pulp.  Puree pulp in blender with the chicken broth. 
Season to taste with salt and pepper.   Gradually stir in whipping cream.  Chill. 
Add sherry and cognac right before serving.  Garnish if you like with any of
the above options or use your imagination. If you like you can use the avocado
shells as serving dishes.  Just keep them intact and set them
in a bowl of ice and fill with soup.
